BREKKIE Omelette

INGREDIENTS

2 x eggs Olive oil spray 

Tspn curry powder 

Salt & Pepper to taste 

¼ cup Grated cheese 

4 x cherry tomatoes 

¼ cup Spinach leaves handful ham or bacon 

¼ onion

METHOD

1.Turn Copper Pro or stovetop on 

2.Lightly spray to coat with olive oil 

3.Dice onion and meat (if required) 

4.Chop spinach leaves and tomatoes 

5.Mix all ingredients well in a bowl and pour into a medium heat pan or Copper Pro.

6.Close the lid and leave for 6 minutes or until cooked fully and fluffy or flip until brown.

MISSY’S TIP! This dish can also use beef to change things up!


GRANOLA Cups

INGREDIENTS

2 cups granola 

2 tbsp coconut oil 

melted 2 tbsp honey maple syrup, 

plus extra for serving 1 x cup greek yoghurt 1 cup fresh berries

METHOD

1.Preheat the oven to 180℃. 

2.Line an oven tray with baking paper. 

3.In a large bowl, combine the granola, melted coconut oil, and honey maple syrup. Mix until the granola is fully coated.

4.Spread the granola out evenly on the prepared baking tray.

5.Bake for 10-12 minutes or until crispy and golden.

6.Allow the granola to cool slightly, and then break into smaller pieces.

7.In a small bowl, combine the Greek style strained yogurt with a drizzle of honey maple syrup, to sweeten to your preference.

8.In a bowl, toss the fresh berries, strawberries,and raspberries together.

9.To serve, divide the yogurt mixture into four serving bowls. Add the yogurt on top of the granola. Top with the mixed berries.

10.Drizzle a little extra honey maple syrup on top,if desired.

MISSY’S Salad

INGREDIENTS

2 x large handfuls Mixed lettuce leaves 1/4 cup sliced cucumber 

4 x quartered Cherry tomatoes 

2 x slices chopped capsicum 

3 x slices chopped red onion 

¼ cup Persian fetta cheese 

¼ cup Mixed Dried blueberries, dried cranberries, Pinenuts, Pepita seeds, goji berries, Sultanas, Sunflower seeds Dash Low fat dressing

METHOD

1.Slice and chop all vegetables and put aside

2.Prepare the dried fruit, nut and seed mix and put aside

3.Place the lettuce leaves in a bowl 4.Sprinkle the vegetables and nut mix evenly on top

5.Serve with fetta cheese and low fat dressing

6.For extra flavour, add in a few chopped wedges of an apple or orange. This is great in Summer and is a dressing alternative.

TUNA & BROCCOLI Pasta

INGREDIENTS

1 cup Pasta 

1 cup Broccoli 

1 Garlic clove 

185g Springwater Tuna 

2 tbsp Semi-dried Tomato 

1/4 cup Cheese 

1/4 cup Greek yoghurt 

½ Lemon wedge

METHOD

1.Cook the pasta until el dente and steam the broccoli

2.While the pasta is cooking, in a pan, fry the chopped garlic until brown and fragrant.

3.Make the sauce by mixing greek yoghurt and lemon juice.

4.Add to the pan the drained tuna, tomato, broccoli and sauce

5.Mix in drained pasta until blended whilst sprinkling in the cheese

BERRY + BANANA Nice-Cream

INGREDIENTS

2 cups frozen berries 

2 x bananas 

300g x Low-fat strawberry yoghurt

METHOD

1.Place all ingredients into a blender 

2.Blend on high speed, scraping down the sides of the jug occasionally, until completely smooth
